Genotypic and phenotypic diversity among Lactobacillus plantarum and Lactobacillus pentosus isolated from industrial scale cucumber fermentations

The Lactobacillus plantarum and pentosus genotypes existing in industrial-scale cucumber fermentations were defined using rep-PCR-(GTG)5. ability of each genotype to ferment cucumbers under various conditions was evaluated. Rep-PCR-(GTG)5 the technique capable illustrating most intraspecies discrimination compared sequencing housekeeping genes (recA, dnaK, pheS rpoA), MLST RAPD with primers LP1, OPL5, M14 COC. Ten genotypic clusters for 199 L. tested three 17 clones. 216 clones genotyped 37 additional fermentation isolates, same species, rapidly decrease pH juice medium combinations sodium chloride (0 or 6%), initial (4.0 5.2) temperatures (15 30 °C) determined a fractional factorial screening design. A reduced observed strains as pentosus, except clone 3.2.8, which had ropy phenotype aligned cluster A. belonging (B, D J) more efficient strains. This research identified genetically diverse one candidates starter cultures commercial fermentations.
